Ingredients/Components

  • sugar - 1 c
  • stick cinnamon - 1 in
  • whole cloves - 4 item
  • whole allspice - 2 item
  • fresh rhubarb, cut into 1/2 in - 1 lb
  • strip orange rind orange part only or 1 tsp - 1 4

How to make spiced rhubarb:

Preheat oven to 400°.

Toss rhubarb with sugar in a 2 qt. shallow baking dish with cover. Add cinnamon, cloves, allspice and orange rind. Cover.

Bake in preheated hot oven for 10 minutes. Uncover, stir gently to dissolve sugar, cover. Bake 15 min. longer or until rhubarb is tender but not mushy. Remove dish to wire rack, leave covered, cool completely. Refrigerate several hours to mellow flavor.

To serve, remove spices. Spoon rhubarb into individual compote dishes or over vanilla ice cream. Serves 6.
