  • sugar - 4 c
  • cider vinegar - 1/4 c
  • lemon juice - 1/4 c
  • orange juice - 1/2 c
  • paraffin - 1 item
  • whole allspice, tied in a cheesecloth bag

How to make spiced pear butter:

Pare and core pears; cut into 1-inch cubes. To make 3 quarts, place in 5-quart kettle with vinegar and 1/4 cup water. Cook, covered, until soft, about 30 minutes. Mash with potato masher or put through food mill. Measure pulp. There should be about 7 cups. Return to kettle.

Add sugar, orange juice, lemon juice and allspice; cook over medium heat, stirring frequently, until mixture is very thick, about 1 hour. Remove allspice.

Meanwhile, sterilize 6 or 7 (8 ounce) jelly glasses. Leave in hot water until ready to fill. Lift out with tongs. Ladle pear butter into hot, sterilized jars, filling to within 1/2 inch of the top. Cover immediately with about 1/8-inch hot paraffin; cool. Cover with metal lids.
