Ingredients/Components

  • flour - 1 c
  • water - 1 c
  • chopped onions - 1 c
  • chopped ham - 1/2 c
  • olive oil - 1/4 c
  • chopped parsley - 2 Tbsp
  • black pepper - 1 item
  • small bay leaf - 1 item
  • white wine - 1/2 c
  • chopped garlic - 1/2 tsp
  • hard-cooked egg, chopped - 1 item
  • pork chops 1 inch thick - 8 item
  • pitted black olives, halved - 12 item
  • chopped, drained canned tomatoes - 1 c

How to make spanish pork chops:

Sprinkle chops with flour and pepper. Shake to remove excess flour. In skillet brown chops. Put chops on plate. Add onions, garlic and bay leaf to fat in skillet. Cook 5 minutes over moderate heat until onions are soft. Add tomatoes and ham. Raise heat and stir until most of liquid evaporates and mixture holds shape. Stir in wine, water, egg, parsley and olives. Bring to boil. Return chops to skillet; baste with sauce. Cover. Reduce heat and simmer 30 to 40 minutes or until tender.
