Spanish omelette
Ingredients/Components
- eggs - 6 item
- salt - 1 tsp
- baking powder - 1 tsp
- plus 1 Tbsp - 1/4 c
- medium onion - 1 item
- black pepper - 1/4 tsp
- sweet peas canned - 1/2 c
- potato, peeled and in 1-inch cubes - 1 item
How to make spanish omelette:
Saute potato in 1/4 cup oil until lightly browned and tender. Remove and leave a little oil to saute the onion. Beat eggs with the baking powder and add salt and pepper.Heat 1 tablespoon oil in deep pan (medium hot). Add potatoes, onion and sweet peas to eggs and pour into pan. Lower heat to medium. Cover and cook until done on bottom. Turn over using a large plate and cook on other side until browned. Serve for lunch with rice or as a dinner side dish. Serves 3.
