Ingredients/Components

  • eggs - 6 item
  • salt and pepper - 1 item
  • olive oil - 3 Tbsp
  • minced onion - 1/2 c
  • minced garlic - 1/2 1
  • green pepper, chopped - 1 item
  • sliced tomatoes - 2 item
  • potato, chopped - 1 item
  • grated Cheddar - 1 item

How to make spanish omelet:

In oil, saute potatoes, green peppers, onion and garlic until done but firm. Beat eggs with salt and pepper. Pour over veggies and shake to keep from sticking. When almost set, place tomatoes in single layer over omelet. Cook a bit longer. Place cookie sheet over pan, invert pan, turning omelet, slide back into pan. Cook a bit longer. To serve, invert with tomato side up and add cheese.
