Ingredients/Components

  • oil - 1/4 c
  • salt and pepper - 1 item
  • cloves garlic - 2 item
  • chopped green onions - 5 item
  • minced parsley - 1 item
  • green pepper, chopped - 2 Tbsp
  • eggs, beaten lightly - 4 item
  • large potatoes, boiled, pared and diced - 2 item

How to make spanish omelet:

In skillet cook garlic buds on low heat to flavor oil. Remove garlic and discard. Add to oil the diced potatoes, onions and green pepper. Stir and cook over medium heat until pepper and onions are tender. Add salt, pepper and eggs. Cook over low heat until eggs are set around edges, 10 to 12 minutes.

Place a Pam-sprayed plate over skillet (best to do this over sink, easy clean up). Turn over to slip omelet onto plate; slide back into pan and cook until done. Sprinkle with parsley. Serve warm. Cut into wedges or triangles. Wonderful with wilted spinach or mustard salad greens.
