Spaghetti with zucchini sauce
Ingredients/Components
- salt - 1/2 tsp
- oil - 1/4 c
- pepper - 1/4 tsp
- bay leaf - 1 item
- oregano - 1/4 tsp
- basil - 1/4 tsp
- medium onion, chopped - 1 item
- spaghetti noodles - 8 oz
- diced fresh tomatoes or canned - 3 c
How to make spaghetti with zucchini sauce:
Saute in a large skillet oil and onion. Add zucchini and rest of ingredients (except noodles). Simmer, covered, for 15 minutes. Uncover and simmer for 10 more minutes. Discard bay leaf. Cook spaghetti noodles according to package. Serve noodles with sauce and grated Parmesan cheese. Serves 4 to 6.Recipe categories: Lunch/snacks, Main dish, Spaghetti.
