Ingredients/Components

  • margarine - 2 Tbsp
  • egg, beaten - 1 item
  • clove garlic, minced - 1 item
  • grated Parmesan cheese - 1 oz
  • ground beef - 6 oz
  • cottage cheese - 2/3 c
  • cooked thin spaghetti
  • each diced onion and green pepper - 1/2 c
  • whole tomatoes, drained and chopped reserve liquid - 1 c

How to make spaghetti pie:

Crust:2 c. cooked thin spaghetti1 oz. grated Parmesan cheese1 egg, beaten Crust: In medium bowl, combine all ingredients for crust. Spray a 9-inch glass pie plate with nonstick cooking spray. Spread mixture over bottom and sides to form crust. Preheat oven to 350°.

Filling: Carefully spread cottage cheese over bottom of crust and set aside. In 8-inch nonstick skillet, heat margarine until bubbly and hot. Add onion, pepper and garlic. Saute until onion is translucent. Add beef, tomatoes and reserved liquid. Cook, stirring constantly, until mixture is thickened and hot. Spoon beef mixture over cottage cheese and bake until pie is thoroughly heated, 20 to 25 minutes. Sprinkle pie with Mozzarella cheese and bake until cheese is melted and begins to brown. Remove from oven and let stand 5 minutes before cutting.
