Ingredients/Components

  • egg, beaten - 1 item
  • Parmesan cheese - 2 Tbsp
  • salt and pepper to taste - 1 item
  • olive oil for frying - 1 item
  • thin spaghetti, cooked, drained, rinsed and cooled - 1/8 lb
  • pinch each of oregano and basil - 1 item

How to make spaghetti frittata:

Blend all ingredients together, and brown on one side in a small frying pan in a bit of olive oil. Top with more cheese, and place under broiler until crusty and lightly browned on top. Serves 2 to 3 as an antipasto.
