Ingredients/Components
- olive oil - 1 Tbsp
- chopped onions - 1/4 c
- chicken broth - 1 c
- garlic powder - 1 tsp
- oregano leaves - 1/2 tsp
- red pepper - 1/8 1/4
- boneless, skinless chicken breast, cut into cubes - 1 lb
- can chopped green chilies - 1 oz
- ground cumin - 1 tsp
- cilantro - 1/2 tsp
- can white kidney beans Cannettia, undrained - 1 oz
- shredded Monterey Jack cheese for garnish - 1 item
How to make southwest white chili:
Heat olive oil in a 3-quart saucepan over medium-high heat. Add chicken, cook 4 to 5 minutes, stirring often. Remove chicken with slotted spoon, cover and keep warm.Add chopped onions to saucepan; cook 2 minutes. Stir in chicken broth, green chilies, garlic powder, ground cumin, oregano leaves, cilantro and ground red pepper. Simmer 30 minutes. Stir in cooked chicken and kidney beans; simmer 10 minutes. Garnish with cheese and sliced green onions.
