Ingredients/Components

  • olive oil - 1 Tbsp
  • chopped onions - 1/4 c
  • chicken broth - 1 c
  • garlic powder - 1 tsp
  • oregano leaves - 1/2 tsp
  • red pepper - 1/8 1/4
  • boneless, skinless chicken breast, cut into cubes - 1 lb
  • can chopped green chilies - 1 oz
  • ground cumin - 1 tsp
  • cilantro - 1/2 tsp
  • can white kidney beans Cannettia, undrained - 1 oz
  • shredded Monterey Jack cheese for garnish - 1 item

How to make southwest white chili:

Heat olive oil in a 3-quart saucepan over medium-high heat. Add chicken, cook 4 to 5 minutes, stirring often. Remove chicken with slotted spoon, cover and keep warm.

Add chopped onions to saucepan; cook 2 minutes. Stir in chicken broth, green chilies, garlic powder, ground cumin, oregano leaves, cilantro and ground red pepper. Simmer 30 minutes. Stir in cooked chicken and kidney beans; simmer 10 minutes. Garnish with cheese and sliced green onions.
