Sour cream potato salad
Ingredients/Components
- dairy sour cream - 1/2 c
- mayonnaise - 1 c
- sliced celery - 3/4 c
- sliced green onions and tops - 1/3 c
- hard-cooked eggs - 4 item
- diced, pared cucumber - 1/3 c
- salt and celery seed to taste - 1 item
- prepared horseradish mustard
- clear French or Italian dressing - 1/3 c
How to make sour cream potato salad:
While potatoes are warm, pour dressing over; chill 2 hours. Add celery and onion. Chop egg whites; add. Sieve yolks; reserve some for garnish. Combine remaining sieved yolk with mayonnaise, sour cream and horseradish mustard. Fold into salad. Add salt and celery seed to taste. Chill 2 hours. Add cucumber. Sprinkle reserved yolk over top.
