  • sugar - 1 c
  • cornstarch - 1/3 c
  • salt - 1/4 tsp
  • milk
  • large egg yolks - 4 item
  • sour cream - 1/2 c
  • fresh lemon juice - 1/4 c
  • butter or margarine - 1 Tbsp
  • vanilla extract - 1 tsp
  • grated lemon peel - 1/2 tsp
  • pinch of nutmeg - 1 item
  • baked 9-inch pastry crust
  • whipped cream or topping - 1 item

How to make sour cream pie:

Combine sugar with cornstarch and salt in large saucepan. Gradually whisk in milk until smooth. Bring to boil, stirring gently, over medium-high heat. Boil 1 minute. Remove from heat.

Beat egg yolks lightly in small bowl. Gradually whisk in 1 cup hot mixture. Return yolk mixture to saucepan whisking constantly. Return to boil and boil 1 minute more. Remove from heat and whisk in lemon juice, butter or margarine, vanilla extract, lemon peel and nutmeg until smooth. Cover surface and cool 15 minutes on wire rack.

Whisk in sour cream and pour over baked crust. Cover filling and refrigerate at least 3 hours. Just before serving, spread top with whipped cream or topping.
