- box white cake mix - 1 item
- Cool completely
- unbeaten egg whites - 2 item
- large can coconut - 1 item
How to make sour cream coconut cake:
Bake cake per box instructions in 2 layers. Cool completely. Cut each layer into two. Mix sour cream and sugar.Frosting:1 c. sugar1/3 c. water1/4 tsp. cream of tartar dash of salt2 unbeaten egg whites1 tsp. vanilla Combine sugar, water, cream of tartar and salt. Bring to boiling, stirring until sugar dissolves. Very slowly add sugar syrup to unbeaten egg whites in mixing bowl, beating constantly until stiff peaks form, about 7 minutes. Beat in vanilla.Assembly: Place bottom half of 1 layer on cake plate. Spread 1/2 sour cream/sugar mixture; place top half layer and spread with frosting. Repeat layering and frost top and sides of cake. Cover cake with coconut. Best to refrigerate overnight before serving.
