  • milk - 2 c
  • sour cream - 1 c
  • salt - 1 tsp
  • flour - 4 Tbsp
  • butter - 4 Tbsp
  • cooking oil - 4 Tbsp
  • pepper - 1/2 tsp
  • chopped onion - 1/2 c
  • chili powder - 1 tsp
  • grated cheese - 2 c
  • cooked, chopped chicken - 2 c
  • sliced olives - 1/2 c
  • large flour tortillas - 1 doz

How to make sour cream chicken enchiladas:

Preheat oven to 350°. Season chicken with salt, pepper and chili powder. Quickly heat tortillas in hot oil. On each tortilla, layer 2 tablespoons of chicken, 1 teaspoon onion, 1 teaspoon olives, 1 tablespoon sour cream and 1 tablespoon cheese. Roll up each tortilla and place in oblong baking dish.

Melt butter; add flour, salt and pepper. Stir in milk. Cook and stir until thickened. Add remaining sour cream to sauce and pour over enchiladas. Top with Cheddar cheese and olives. Bake at 350° for 25 minutes or until bubbly hot.
