Soda cracker pie
Ingredients/Components
- egg whites - 3 item
- cream of tartar - 1/2 tsp
- sugar - 1 c
- vanilla - 1 tsp
- chopped pecans - 1 c
- saltines, crushed fine - 18 item
- whipping cream
- pineapple preserves - 3 Tbsp
- coconut - 1/2 c
How to make soda cracker pie:
Topping:1/2 pt. whipping cream3 Tbsp. pineapple preserves1/2 c. coconut Beat egg whites and cream of tartar until stiff. Add sugar, vanilla, chopped pecans and saltines. Pour into greased Pyrex pie dish and bake at 325° for 35 minutes. Cool.Make topping by whipping the cream and adding preserves and coconut. Spread on the cooled pie. Serves 6 to 8.
This pie is rich and delicious, a favorite to serve at bridge clubs when you want something different.
