Ingredients/Components
- salt and pepper to taste - 1 item
- Tbsp flour - 3 item
- Tbsp butter - 6 item
- cups chicken broth - 2 item
- cup sherry - 1/2 item
- quail - 6 item
How to make smothered quail:
Put butter in heavy skillet and brown quail, (lightly flour quail). Remove quail to baking dish. Add flour to butter in skillet and stir well. Slowly add chicken broth and sherry. Blend well and pour over quail. Cover baking dish and bake at 350° until tender. Serve over rice.I sometimes substitute chicken breasts but use less butter. Serve 2 - 3.
