How to make smoked turkey:

Prepare grill. Soak hickory chips in water. Clean and dry turkey inside and out. Salt the cavity. Stuff neck cavity with 1 stalk celery, broken into pieces to fit, and half an onion; fasten opening with turkey pins or sew with string. Stuff the remaining celery and onion into body cavity. Truss. Bend wing tips to the back. Cover with moist paper towels and refrigerate.

Make basting sauce with melted butter, garlic powder and seasoned pepper. Three hours before serving time, add hickory chips to the coals in the grill, having the coals at one side of grill. Set turkey on the side away from the coals; baste with butter mixture and cover with heavy-duty foil. Close lid. Be sure to maintain an even temperature and baste every half hour. Grill for 2 1/2 to 3 hours. Let stand 10 minutes before carving.
