Smoked sausage and bean soup
Ingredients/Components
- water - 6 c
- vinegar - 3 Tbsp
- margarine - 2 Tbsp
- bottled minced garlic - 1 tsp
- medium onion, finely chopped - 1 item
- instant beef bouillon - 1 tsp
- tomato paste or catsup - 1/4 c
- fully cooked smoked turkey sausage, sliced - 16 oz
- red kidney beans, rinsed and drained - 1 (15
- chopped cabbage or preshredded coleslaw mix - 2 c
How to make smoked sausage and bean soup:
In 4-quart Dutch oven, cook the onion and garlic in margarine or butter until tender but not brown. Add the water, potatoes, sausage, beans and bouillon. Heat to boiling. Reduce heat; simmer, covered for 15 minutes. Add the cabbage or coleslaw mix, tomato paste or catsup and vinegar. Simmer, covered, 10 minutes more.
