Ingredients/Components

  • sugar - 1/3 c
  • water - 1 c
  • garlic powder - 1/2 tsp
  • pepper - 1/2 tsp
  • soy sauce - 2 c
  • onion powder - 1/2 tsp
  • non-iodized salt - 1/4 c
  • Tabasco Sauce - 1/2 tsp
  • dry white wine Chardonnay - 1 c
  • Salmon chunks - 1 item

How to make smoked salmon:

Mix together above ingredients for brine (except salmon). Brine salmon chunks for 8 or more hours in the refrigerator. Rinse chunks after brining and pat dry. Air dry 1 to 2 hours to glaze.

Preheat smoker with 2 or 3 pans of wood chips for 15 minutes. Put salmon in smoker and smoke 8 to 12 hours, depending on thickness of fish.
