Smoked salmon
Ingredients/Components
- sugar - 1/3 c
- water - 1 c
- garlic powder - 1/2 tsp
- pepper - 1/2 tsp
- soy sauce - 2 c
- onion powder - 1/2 tsp
- non-iodized salt - 1/4 c
- Tabasco Sauce - 1/2 tsp
- dry white wine Chardonnay - 1 c
- Salmon chunks - 1 item
How to make smoked salmon:
Mix together above ingredients for brine (except salmon). Brine salmon chunks for 8 or more hours in the refrigerator. Rinse chunks after brining and pat dry. Air dry 1 to 2 hours to glaze.Preheat smoker with 2 or 3 pans of wood chips for 15 minutes. Put salmon in smoker and smoke 8 to 12 hours, depending on thickness of fish.
