Ingredients/Components

  • sugar - 1/2 tsp
  • salt - 1/8 tsp
  • flour - 1/2 c
  • cornstarch - 1/2 c
  • water - 1/2 c
  • egg - 1 item
  • shoyu - 2 tsp
  • m - 1/8 tsp
  • green onion, chopped - 1 Tbsp
  • fresh shrimp, washed and shelled - 1 lb
  • Beat egg and add water
  • 5-inches dashikonbu
  • Bonito flakes - 1/2 c
  • turnip, grated - 1/2 c

How to make shrimp tempura:

Sift dry ingredients together. Beat egg and add water. Add to dry ingredients and mix well. For the thin lacy batter, remove 1/2 cup batter. Add 2 tablespoons water. The remaining portion is the thick dipping batter for shrimp. Heat fat to 375°. Dip fingers in the thin lacy batter and sprinkle over fat. Repeat several times until a lacy network is formed. Dip shrimp in thick batter and place on lacy network when lightly browned. When tempura is golden brown, break network of batter and turn each shrimp.Tempura Sauce:2 c. water 5-inches dashikonbu1/2 c. Bonito flakes2 tsp. shoyu1/2 tsp. salt1/2 tsp. sugar1/8 tsp. m.s.g.1/2 c. turnip, grated1 Tbsp. green onion, chopped Add dashikonbu to boiling water and cook 10 minutes. Add Bonito and boil for 3 minutes. Remove from burner and strain. Add seasonings and bring to a boil. Cool. Add turnip and green onion.
