  • sugar - 1/2 c
  • salt - 1/4 tsp
  • flour - 1 c
  • egg, slightly beaten - 1 item
  • baking powder - 1 tsp
  • soy sauce - 1/2 c
  • chicken broth - 1 c
  • ice water - 1 c
  • dry sherry - 2 Tbsp
  • grated ginger root and/or radish - 1 Tbsp
  • peeled, deveined shrimp leave tails on shrimp - 2 lb
  • oil for deep-frying - 1 item

How to make shrimp tempura:

Make dipping sauce by combining broth, sugar, soy sauce, sherry and ginger and/or radish. Set aside.

In small bowl, combine flour, salt and baking powder. Stir egg and ice water together, then stir into flour mixture. Set in large bowl of ice to keep cold. Heat oil in large heavy skillet. Hold shrimp by tail; dip into batter, letting excess drip back into bowl. Deep-fry until golden brown. Drain on paper towels. Serve with dipping sauce. Makes 4 servings.
