Shrimp scampi



  • salt - 1/2 tsp
  • butter - 1/2 c
  • lemon juice - 2 Tbsp
  • parsley - 2 Tbsp
  • large clove garlic, minced - 1 item
  • jumbo raw shrimp, cleaned - 1 lb

How to make shrimp scampi:

Place butter in a 2-quart casserole dish. Microwave at High until melted (1 to 2 minutes). Stir in parsley, lemon juice, garlic and salt. Add shrimp; toss to coat. Cover. Microwave at High until shrimp are pink, opaque and tender (do not overcook or shrimp will be tough), 3 1/2 to 5 1/2 minutes, stirring twice. Serve over rice or angel hair pasta. Serves 4.
