Shrimp mousse



  • lemon juice - 1 Tbsp
  • sliced green onion - 2 Tbsp
  • mayonnaise or salad dressing - 1 c
  • can water - 1/2 item
  • hard-cooked eggs, chopped - 4 item
  • can cream of shrimp soup - 1 item
  • envelopes Knox gelatine - 2 item
  • cream-style cottage cheese - 1 c
  • pepper or seasoned salt - 1/8 tsp
  • frozen, cooked shrimp, chopped - 7 oz

How to make shrimp mousse:

Stir soup, water and gelatin together and let stand for 10 minutes. Heat and stir until gelatin is dissolved. Cool. Beat in mayonnaise and cottage cheese with rotary beater. Fold in shrimp, eggs and onion. Pour into 6-cup mold or individual salad molds sprayed lightly with Pam. Chill until firm.

Instead of the frozen shrimp you may use 1 (4 1/4-ounce) can shrimp.
