Shrimp lo mein
Ingredients/Components
- small shrimp, shelled, deveined and chopped - 1/2 lb
- sherry - 1 tsp
- lemon juice - 1 tsp
- cornstarch - 1 tsp
- vermicelli, boiled al dente - 1/2 lb
- soy sauce - 3 Tbsp
- oil - 1 Tbsp
- onion, sliced - 1 item
- slices ginger root, minced - 2 item
- can water chestnuts, drained and chopped - 1 item
- green beans, chopped diagonally - 1/2 lb
- sugar - 1/2 tsp
- fresh mushrooms, sliced - 4 item
- green onions, chopped - 2 item
- beef bouillon - 1 tsp
- pepper to taste - 1 item
How to make shrimp lo mein:
In a bowl, combine first 4 ingredients. Cover and refrigerate 1/2 hour. In a second bowl, combine vermicelli and soy sauce. Toss to blend thoroughly.In wok, heat oil over low heat. Add onions and ginger. Stir-fry 1 minute or until onions are wilted. Add water chestnuts. Stir-fry 30 seconds. Add green beans and sugar. Stir-fry 1 more minute. Stir in mushrooms, green onions and vermicelli mixture. Stir-fry 3 minutes. Push vermicelli mixture to sides of wok to create a well in the center. To the center, add shrimp mixture. Stir-fry 1 minute or until shrimp turns pink all over. Stir in bouillon and pepper. Stir-fry 1 minute more.
Note: Can use beef or chicken in place of shrimp.
