Shrimp linguine
Ingredients/Components
- margarine or butter - 1/3 c
- pepper - 1/8 tsp
- sliced green onion - 1/4 c
- grated Parmesan cheese - 1/4 c
- snipped parsley - 2 Tbsp
- cloves garlic, minced - 2 item
- dried basil, crushed - 1/2 tsp
- dry white wine - 2 Tbsp
- salt to taste - 1 item
- linguine - 6 oz
- Parmesan cheese optional - 1 item
- sliced, fresh mushrooms - 1 c
- shrimp in the shells - 1 lb
How to make shrimp linguine:
Cook linguine al dente; drain. Cook shrimp in boiling water until pink; drain and cool. Carefully remove shell from each shrimp, leaving the tail intact. Devein shrimp. (You should have about 2 cups cooked shrimp.) In a 3-quart microwave-safe casserole, combine mushrooms, margarine, green onions and garlic. Micro-cook, covered, on 100% power (High), 2 to 3 minutes or until onions are tender. Stir in the shrimp, 1/4 cup Parmesan cheese, parsley, wine, basil and pepper. Micro-cook, uncovered, on High for 30 seconds or until heated through. Add linguine to shrimp mix. Toss to mix. Serve immediately. Put additional cheese, if desired.
