Ingredients/Components

  • margarine or butter - 1/3 c
  • pepper - 1/8 tsp
  • sliced green onion - 1/4 c
  • grated Parmesan cheese - 1/4 c
  • snipped parsley - 2 Tbsp
  • cloves garlic, minced - 2 item
  • dried basil, crushed - 1/2 tsp
  • dry white wine - 2 Tbsp
  • salt to taste - 1 item
  • linguine - 6 oz
  • Parmesan cheese optional - 1 item
  • sliced, fresh mushrooms - 1 c
  • shrimp in the shells - 1 lb

How to make shrimp linguine:

Cook linguine al dente; drain. Cook shrimp in boiling water until pink; drain and cool. Carefully remove shell from each shrimp, leaving the tail intact. Devein shrimp. (You should have about 2 cups cooked shrimp.) In a 3-quart microwave-safe casserole, combine mushrooms, margarine, green onions and garlic. Micro-cook, covered, on 100% power (High), 2 to 3 minutes or until onions are tender. Stir in the shrimp, 1/4 cup Parmesan cheese, parsley, wine, basil and pepper. Micro-cook, uncovered, on High for 30 seconds or until heated through. Add linguine to shrimp mix. Toss to mix. Serve immediately. Put additional cheese, if desired. Serves 4.
