Shrimp in angel hair pasta casserole
Ingredients/Components
- eggs - 2 item
- half and half - 1 c
- butter - 1 Tbsp
- chopped fresh parsley - 1/3 c
- medium shrimp, peeled and deveined - 1 lb
- 4 oz - 1/2 c
- plain yogurt - 1 c
- 9 oz - 1 pkg
- chopped fresh basil or 1 tsp - 1/4 c
- crumbled Feta cheese - 1/3 c
- snow peas optional - 1 item
- mild, thick and chunky salsa - 1 jar
- plum tomatoes stuffed with cottage cheese optional - 1 item
How to make shrimp in angel hair pasta casserole:
With butter, grease 12 x 8-inch pan. Combine eggs, half and half, yogurt, Swiss cheese, Feta cheese, parsley, basil and oregano in medium bowl; mix well. Spread 1/2 the pasta on bottom of prepared pan. Cover with salsa; add 1/2 the shrimp. Cover with remaining pasta. Spread egg mixture over pasta and top with remaining shrimp. Sprinkle Monterey Jack cheese over top. Bake in preheated 350° oven for 30 minutes or until bubbly. Let stand 10 minutes.
