Ingredients/Components

  • sugar - 1 tsp
  • salt - 2 tsp
  • water - 3 c
  • margarine - 2 Tbsp
  • pepper - 1/4 tsp
  • clove garlic, minced - 1 item
  • onion, chopped - 1 item
  • basil leaves - 1/2 tsp
  • chopped parsley - 2 Tbsp
  • green pepper, diced - 1 item
  • sliced okra - 2 c
  • canned tomatoes - 2 c
  • raw shrimp - 1 lb
  • hot, cooked rice

How to make shrimp gumbo:

Wash, peel, dice and devein shrimp, then refrigerate. Save shrimp shells and rinse in cold water. Combine shells, water and salt in kettle and simmer for 20 minutes.

Melt margarine in skillet. Add garlic, onion and green pepper. Cook about 10 minutes, stir-frying. Strain broth from shells and return it to the kettle. Add onion, garlic, green pepper mixture, tomatoes and okra. Cover and simmer about 1/2 hour. Add pepper, basil, sugar and diced shrimp and cover and simmer 10 minutes more. Add parsley and serve in shallow soup bowls. Spoon hot rice into each bowl and serve.
