Shrimp gumbo
Ingredients/Components
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- shrimp - 1 lb
- green pepper, sliced - 1/2 item
- medium onion, sliced - 1 item
- dried red pepper - 1 tsp
- peeled and chopped ripe tomatoes - 2 c
- fresh okra or 1 10 oz - 1 lb
How to make shrimp gumbo:
Saute onion and pepper in a little olive oil. Add the tomatoes, herbs and salt and pepper to taste. Simmer, uncovered, for 15 minutes.Slice the okra in 1/4-inch rounds and cook it for about 5 minutes in the tomato sauce. Peel and clean the raw shrimp. Cut them in pieces if they are large and add to the pan. Simmer for 5 minutes. Serve with a bowl of white rice.
