Ingredients/Components

  • flour - 4 Tbsp
  • stick margarine - 1 item
  • oil - 2 Tbsp
  • Worcestershire sauce - 1 Tbsp
  • cloves garlic - 2 item
  • bell pepper - 1 item
  • sticks celery - 2 item
  • onion - 1 item
  • chopped scallion - 1 Tbsp
  • fresh peeled shrimp - 2 lb
  • Creole seasoning to taste - 1 item
  • fresh diced okra - 2 c

How to make shrimp gumbo:

Fry fresh okra in 2 tablespoons of oil for 10 minutes, stirring constantly. Use an aluminum Dutch oven. Do not use black iron pot. Remove okra and set aside. Add margarine and flour. Make a roux in the same pot. Chop all veggies. Add them, plus the okra, and cook for 5 minutes until wilted. Add 3 quarts of water and Worcestershire sauce and cook 1 to 2 hours. Then add shrimp. Cook 30 minutes or until tender. Season with Creole seasoning. Serve with rice. Add garnish with green onion tops.

Note: Diced smoked sausage in the gumbo is also a great Cajun dish.
