Shrimp gumbo
Ingredients/Components
- flour - 4 Tbsp
- stick margarine - 1 item
- oil - 2 Tbsp
- Worcestershire sauce - 1 Tbsp
- cloves garlic - 2 item
- bell pepper - 1 item
- sticks celery - 2 item
- onion - 1 item
- chopped scallion - 1 Tbsp
- fresh peeled shrimp - 2 lb
- Creole seasoning to taste - 1 item
- fresh diced okra - 2 c
How to make shrimp gumbo:
Fry fresh okra in 2 tablespoons of oil for 10 minutes, stirring constantly. Use an aluminum Dutch oven. Do not use black iron pot. Remove okra and set aside. Add margarine and flour. Make a roux in the same pot. Chop all veggies. Add them, plus the okra, and cook for 5 minutes until wilted. Add 3 quarts of water and Worcestershire sauce and cook 1 to 2 hours. Then add shrimp. Cook 30 minutes or until tender. Season with Creole seasoning. Serve with rice. Add garnish with green onion tops.Note: Diced smoked sausage in the gumbo is also a great Cajun dish.
