Shrimp creole
Ingredients/Components
- salt - 2 tsp
- flour - 1/4 c
- water - 1/4 1/2
- oil - 1/2 c
- chili powder - 1 Tbsp
- can tomato sauce - 1 oz
- hot cooked rice - 1 item
- chopped parsley
- finely chopped onions - 2 c
- black pepper - 1/2 tsp
- finely chopped celery - 1/4 c
- shrimp - 2 lb
- red pepper - 1/4 tsp
- finely chopped green peppers - 1 c
- chopped green onion tops - 1 Tbsp
How to make shrimp creole:
Make a golden brown roux of oil and flour. Add onion, green pepper and celery; cook slowly until clear, stirring frequently. Add tomato sauce and cook, covered, over low heat for 20 minutes. Add shrimp, black and red pepper and chili powder. If mixture becomes dry, add 1/4 cup water. Cook 10 minutes longer until shrimp turns pink. When ready to serve, stir in parsley and onion tops.
