Shrimp creole
Ingredients/Components
- salt - 2 tsp
- butter or oleo
- pepper - 1/8 tsp
- chopped onions - 1/2 c
- clove garlic, finely minced - 1 item
- green pepper, chopped - 1/2 c
- dash of cayenne pepper - 1 item
- bay leaves - 2 item
- hot, cooked rice - 3 c
- fresh shrimp, shelled and deveined * - 1 lb
- medium, ripe tomatoes - 6 item
How to make shrimp creole:
Saute onions, garlic and green pepper in butter or oleo, cooking until soft over low heat, about 10 minutes. Peel tomatoes and cut into eighths. Add tomatoes, salt, bay leaves, pepper and cayenne and continue to cook, uncovered, for about 10 minutes, stirring often. Add shrimp; cover and cook 10 minutes longer. Remove bay leaves and serve at once on hot rice.*If using canned shrimp, add for the last 3 minutes of cooking time. To use quick-frozen shrimp if uncooked and thawed, proceed as for fresh. If cooked, do not thaw and proceed as for canned.
