Shrimp cocktail
Ingredients/Components
- salt - 2 tsp
- pinch of salt - 1 item
- ketchup
- whole black peppercorns - 5 item
- freshly ground black pepper - 1/4 tsp
- fresh lime juice - 1 tsp
- ice - 1 item
- grated lime zest - 1/2 tsp
- lime wedges - 1 item
- drops hot red pepper sauce - 8 item
- large shrimp, shelled and deveined tails intact - 2 lb
- each: dark brown sugar, minced shallots and prepared horseradish - 1 Tbsp
How to make shrimp cocktail:
Cocktail Sauce:1 c. ketchup1 Tbsp. each: dark brown sugar, minced shallots and prepared horseradish1/2 tsp. grated lime zest1/4 tsp. freshly ground black pepper pinch of salt1 tsp. fresh lime juice8 drops hot red pepper sauce Up to 4 hours before serving: Over high heat, in large saucepan, heat 4 cups cold water, the salt and peppercorns to boiling; add shrimp. Cook 2 1/2 minutes or until barely cooked; drain immediately. Place in bowl of ice and water to stop cooking and cool; drain. Cover; chill.In bowl, mix sauce ingredients. Line platter with ice; top with shrimp and lime wedges. Serve with sauce. Makes 10 servings.
