Ingredients/Components

  • half and half - 2 c
  • salt - 1/2 tsp
  • flour - 4 Tbsp
  • butter - 4 Tbsp
  • pepper - 1/2 tsp
  • chopped onion - 1/4 c
  • chopped celery - 1/2 c
  • chopped parsley - 2 Tbsp
  • dry sherry - 2 Tbsp
  • shrimp - 1 lb

How to make shrimp bisque:

Wash shrimp and place in 1-quart boiling water. Bring water back to boiling. Cover and remove from heat. Let stand for 5 minutes. Remove shrimp and add next 5 ingredients to cooking water. Simmer 30 minutes. Peel, devein and chop shrimp. When stock is finished simmering, blend in blender with 1/2 the shrimp until smooth.

In large saucepan, melt butter and blend in flour, stirring until smooth and bubbly. Add stock, stirring until smooth and thickened. Add half and half and heat until hot. Add remaining shrimp and sherry.
