Ingredients/Components

  • butter - 1/2 c
  • lemon juice - 1 Tbsp
  • parsley - 1 Tbsp
  • minced onion - 2 Tbsp
  • coarse black pepper - 1 Tbsp
  • cans mushroom soup - 4 item
  • raw white rice, cooked as usual - 2 c
  • cooked, deveined shrimp add last - 3 lb

How to make shrimp and rice casserole:

Over low flame, stir in all ingredients. Pour into greased 9 x 13-inch casserole. Top with wedges of green pepper which have been boiled with 3 garlic cloves and salt for 5 minutes. Sprinkle heavily with grated cheese (Cheddar). Bake at 350° for 45 minutes to 1 hour. Serves 12 +.
