Shrimp and rice casserole
Ingredients/Components
- butter - 1/2 c
- lemon juice - 1 Tbsp
- parsley - 1 Tbsp
- minced onion - 2 Tbsp
- coarse black pepper - 1 Tbsp
- cans mushroom soup - 4 item
- raw white rice, cooked as usual - 2 c
- cooked, deveined shrimp add last - 3 lb
How to make shrimp and rice casserole:
Over low flame, stir in all ingredients. Pour into greased 9 x 13-inch casserole. Top with wedges of green pepper which have been boiled with 3 garlic cloves and salt for 5 minutes. Sprinkle heavily with grated cheese (Cheddar). Bake at 350° for 45 minutes to 1 hour. Serves 12 +.Recipe categories: Main dish, Casseroles, Shrimp.
