Ingredients/Components

  • flour - 2 Tbsp
  • butter - 6 Tbsp
  • sliced fresh mushrooms - 1/4 lb
  • 1 lb - 2 c
  • minced onion - 3 Tbsp
  • sherry - 1/4 c
  • chicken bouillon - 2/3 c
  • frying chicken whole, cut up or parts - 3 lb
  • salt, pepper and paprika for seasoning chicken - 1 item

How to make sherried artichoke chicken:

Sprinkle chicken generously with salt, pepper and paprika to taste. Brown chicken on all sides in 4 tablespoons butter. Transfer to casserole. Arrange artichoke hearts between chicken pieces. Add remaining butter to drippings in frying pan; add mushrooms and onion and saute until just tender. Sprinkle flour over mushrooms and onions and stir in bouillon and sherry. Cook, stirring well, for a few minutes, until flour is all integrated and sauce is smooth. Pour over chicken. Cover and bake in moderate oven, 375°, for 40 minutes or until chicken is tender. Serves 4.
