Sherried artichoke chicken
Ingredients/Components
- flour - 2 Tbsp
- butter - 6 Tbsp
- sliced fresh mushrooms - 1/4 lb
- 1 lb - 2 c
- minced onion - 3 Tbsp
- sherry - 1/4 c
- chicken bouillon - 2/3 c
- frying chicken whole, cut up or parts - 3 lb
- salt, pepper and paprika for seasoning chicken - 1 item
How to make sherried artichoke chicken:
Sprinkle chicken generously with salt, pepper and paprika to taste. Brown chicken on all sides in 4 tablespoons butter. Transfer to casserole. Arrange artichoke hearts between chicken pieces. Add remaining butter to drippings in frying pan; add mushrooms and onion and saute until just tender. Sprinkle flour over mushrooms and onions and stir in bouillon and sherry. Cook, stirring well, for a few minutes, until flour is all integrated and sauce is smooth. Pour over chicken. Cover and bake in moderate oven, 375°, for 40 minutes or until chicken is tender.
