Shepherd's pie
Ingredients/Components
- small onion, chopped - 1 item
- clove garlic, chopped - 1 item
- small red pepper, chopped - 1/2 item
- ground beef or left over meat roast, steak, cut in cubes - 1 lb
- large can Progresso minestrone soup - 1 item
- small can tomato sauce - 1 item
- each: pepper, salt and oregano - 1 tsp
- bay leaf - 1 item
- or 5 potatoes for mashing - 4 item
How to make shepherd's pie:
Saut?© onion, garlic and red pepper until soft. Add ground beef and brown. In a casserole dish, add soup, tomato sauce and seasonings. Add meat mixture and stir well. If you are using left over cooked meat, just add it to the soup; do not cook again. Mash the potatoes and spoon over the soup and meat mixture around the dish, leaving a hole in the middle to let steam escape. Bake at 350° for 40 minutes; the potatoes should be browned and mixture bubbling.Recipe categories: Main dish, Meat, Beef.
