Shaker lemon pie
Ingredients/Components
- sugar - 2 c
- eggs, well beaten - 4 item
- large lemons - 2 item
- top and bottom crust for a 9-inch pie
How to make shaker lemon pie:
Slice the lemons as thin as paper, rind and all, no seeds. Combine them with the sugar and mix well. Let stand 2 hours or longer, preferably, blending occasionally. Add the beaten eggs to the lemon mixture and mix well.Turn into a 9-inch pie shell bottom, arranging lemon slices evenly. Cover with top crust and cut several slits near the center. Bake at 450° for 15 minutes. Reduce heat to 375° and bake for about 20 minutes or until a silver knife, inserted near the edge, comes out clean. Cool before serving.
