Sesame chicken and asparagus pasta
Ingredients/Components
- brown sugar - 1 Tbsp
- chunky peanut butter - 6 Tbsp
- red wine vinegar - 1 Tbsp
- cloves garlic, minced - 3 item
- soy sauce - 1/4 c
- linguine - 8 oz
- sesame oil - 6 Tbsp
- cucumber, diced - 1 item
- green onions, julienned - 3 item
- thin asparagus, trimmed - 1 lb
- hot chile oil in specialty food area of grocery store - 3 Tbsp
- boneless, skinless, cooked chicken breasts - 2 item
- toasted sesame seed * - 5 Tbsp
How to make sesame chicken and asparagus pasta:
*Toast sesame seed in 350° oven only 2 to 5 minutes. Watch!Cook linguine while preparing sauce. Process garlic, vinegar, brown sugar, peanut butter and soy sauce slowly for 1 minute in food processor. Add sesame oil and chile oil. Chop chicken and toss with cooked linguine. Add sauce and sesame seed; toss well. Cut asparagus into about 1 inch pieces. Blanch 1 minute in boiling water.
Serve linguine in large bowl or plate. Cover over top with asparagus, cucumbers and onions. Garnish with sesame seed.
