  • sugar - 1 Tbsp
  • salad oil - 1 Tbsp
  • soy sauce - 4 Tbsp
  • rice vinegar - 4 Tbsp
  • green onions - 6 item
  • bean sprouts - 1 lb
  • sesame oil - 1 Tbsp
  • whole chicken - 1 item
  • hot chili oil - 1 Tbsp
  • small ginger root, crushed - 1 item
  • sesame paste - 1/3 c
  • small hot pepper optional - 1 item

How to make sesame chicken:

In a medium size bowl, combine salad oil, sugar, sesame oil, hot chili oil, soy sauce, rice vinegar and hot pepper. Set aside.

Wash the bean sprouts and blot with paper towels. Using a vegetable steamer or double boiler, gently steam for 2 minutes. Remove the bean sprouts and set aside. Julienne the green onions, cutting them into narrow 1-inch strips. Set aside with the bean sprouts.

Clean the chicken. Boil water in a Dutch oven or large pan, using enough water so that when you add the chicken, it will be covered. Add crushed ginger root and green onions to the boiling water. Add the chicken, bringing it back to a boil over high heat. Once the water is boiling, reduce the temperature to medium and cook for 30 minutes. Remove the chicken from pan and place it in cold water for a moment, then set aside to cool for 20 minutes. Remove skin and bones and cut into bite size cubes. Place chicken in center of a decorative platter and surround with the vegetables. Place the sesame sauce in a bowl for dipping. Serves 6 to 8.
