Seafood jambalaya
Ingredients/Components
- cooking oil - 2/3 c
- parsley, chopped - 2/3 c
- large onion, chopped - 1 item
- rice - 3 c
- crabmeat - 1 lb
- small can tomato sauce - 1 item
- green bell pepper, chopped - 2/3 c
- oysters - 1 doz
- shrimp, peeled - 3 lb
- smoked sausage, sliced - 1 lb
- shallots, chopped - 2/3 c
How to make seafood jambalaya:
Boil rice; set aside. Saute onion over medium-slow heat in oil until almost brown. Add shrimp and cook 15 minutes, stirring occasionally. Add parsley, shallots and bell pepper; saute 10 minutes, stirring. Add smoked sausage and cook for 10 minutes. Add 3 cups water and cook for 1/2 hour over medium heat. Add oysters and crabmeat. Cook 15 minutes; salt and pepper to taste. Add rice, a little at a time, steadily stirring, until all rice is in. Heat over medium heat for 15 minutes, stirring occasionally.
