Ingredients/Components

  • cooking oil - 2/3 c
  • parsley, chopped - 2/3 c
  • large onion, chopped - 1 item
  • rice - 3 c
  • crabmeat - 1 lb
  • small can tomato sauce - 1 item
  • green bell pepper, chopped - 2/3 c
  • oysters - 1 doz
  • shrimp, peeled - 3 lb
  • smoked sausage, sliced - 1 lb
  • shallots, chopped - 2/3 c

How to make seafood jambalaya:

Boil rice; set aside. Saute onion over medium-slow heat in oil until almost brown. Add shrimp and cook 15 minutes, stirring occasionally. Add parsley, shallots and bell pepper; saute 10 minutes, stirring. Add smoked sausage and cook for 10 minutes. Add 3 cups water and cook for 1/2 hour over medium heat. Add oysters and crabmeat. Cook 15 minutes; salt and pepper to taste. Add rice, a little at a time, steadily stirring, until all rice is in. Heat over medium heat for 15 minutes, stirring occasionally. Serves 6 to 8 people.
