  • flour - 2 Tbsp
  • pepper - 1 tsp
  • diced green pepper - 1 c
  • chopped tomato
  • onion, chopped - 1 c
  • tomato paste
  • basil leaves - 1 tsp
  • peanut oil - 2 Tbsp
  • diced celery - 1 c
  • hot sauce - 2 Tbsp
  • white wine - 1 c
  • red wine - 1 c
  • rice - 1 c
  • thyme - 1 tsp
  • dash of Tabasco - 1 item
  • crab meat - 2 c
  • smoked sausage - 1 c
  • peeled shrimp - 1/2 lb
  • green onion, chopped - 1/2 c
  • chicken breast, cubed - 1 item
  • beef stock or broth - 1 c

How to make seafood gumbo:

In Dutch oven, make dark roux with peanut oil and flour; add onions, celery and green pepper and saute for about ten minutes. Add tomato paste, then all liquids, and then all spices and chopped tomatoes. Simmer for about 15 to 20 minutes. Add more wine, if necessary.

In frying pan, saute chicken breast cubes and dump into gumbo. Also, toss in the smoked sausage. Simmer for another 5 to 10 minutes; add rice and more wine (if necessary). The crab and shrimp should be added only 3 or 4 minutes before gumbo is served.
