Seafood gumbo
Ingredients/Components
- flour - 1/3 c
- oil - 1/4 c
- chopped onion - 1/2 c
- chicken broth - 3 c
- cloves garlic - 4 item
- bay leaves - 2 item
- cooked rice - 1 item
- can tomatoes - 16 oz
- celery - 1/3 c
- green pepper - 1/3 c
- shrimp - 1 lb
- red pepper - 1/4 tsp
- can white crab meat - 1 item
- frozen okra - 10 oz
How to make seafood gumbo:
Roux: Combine flour and oil; cook over medium heat until dark brown, stirring constantly. Stir in onion, celery, green pepper, garlic, black and red peppers. Cook over medium heat until vegetables are tender. Stir often.Gradually stir in hot broth, add okra and bay leaves. Add tomatoes. Cover and simmer for 20 minutes. Add shrimp and crab. Cook until done (approximately 5 minutes). Serve over rice.
