Seafood crepes
Ingredients/Components
- milk - 1/3 c
- salt - 1 tsp
- flour - 1/3 c
- butter - 4 Tbsp
- water - 1 c
- pinch of salt - 1 item
- cream - 1/2 c
- egg, beaten - 1 item
- pepper - 1/2 tsp
- dry white wine - 1/2 c
- grated Cheddar cheese - 1 2
- small onion, finely chopped - 1 item
- dry bread crumbs - 1/4 c
- scallops - 3/4 lb
- Add egg
How to make seafood crepes:
Sift flour and salt into bowl. Add egg. Gradually add milk; mix until smooth. Let stand 20 minutes. Heat pan; grease well. Pour 2 to 3 tablespoons batter into pan. Cook slowly until batter is set and lightly browned. Turn; brown second side. Makes 4 pancakes.Seafood Filling:1/2 lb. shrimp3/4 lb. scallops1 c. water1/2 c. dry white wine1 small onion, finely chopped3 Tbsp. flour4 Tbsp. butter1/2 c. cream1 tsp. salt1/2 tsp. pepper1/4 c. dry bread crumbs1 to 2 oz. grated Cheddar cheese Place water, wine and onion in pan; bring to boil and simmer 10 minutes. Drain and reserve stock. Stir flour and 4 tablespoons butter over low heat. Add 1 cup stock and cream. Bring to boil; stir until thickened. Add seafood; mix well. Spoon filling in center of crepe and fold up. Sprinkle with crumbs and cheese. Bake at 450° for 10 minutes, or until heated.Recipe categories: < 60 mins, European, French.
