Ingredients/Components

  • sugar - 1 tsp
  • half and half - 1/2 c
  • milk - 1 c
  • salt - 1/4 tsp
  • margarine or butter - 2 Tbsp
  • baking powder - 1/4 tsp
  • vegetable oil - 1 Tbsp
  • egg - 1 item
  • all-purpose flour
  • chopped green onions - 2 Tbsp
  • chopped green onion - 2 Tbsp
  • shredded Swiss cheese 4 oz - 1 c
  • chopped fresh mushrooms - 1/4 c
  • cream cheese, cubed - 6 oz
  • imitation crab * - 12 oz

How to make seafood crepes:

Crepes:2/3 c. all-purpose flour1 c. milk1 Tbsp. vegetable oil1 tsp. sugar1/4 tsp. baking powder1/4 tsp. salt1 egg *In place of imitation crab suggested substitutions: 12 ounces salmon, combination of shrimp and crab.

Prepare crepes. Cook and stir mushrooms and 2 tablespoons onion in margarine until onion is tender. Stir in seafood, half and half and cream cheese. Cook over medium heat, stirring constantly, until cheese is melted. Spoon about 1/4 cup filling down center of each crepe; roll up. Place in dish; sprinkle with Swiss cheese. Microwave, uncovered, on High (100%) until cheese is melted and crepes are heated through (4 to 6 minutes). Sprinkle with 2 tablespoons onion.

Crepes: Beat all ingredients with hand beater until smooth. For each crepe, lightly butter skillet. Heat over medium heat until bubbly. Pour scant 1/2 cup batter into skillet; rotate skillet until batter covers bottom. Cook until lightly brown. Turn and cook other side until light brown. Stack crepes, placing wax paper between each. Keep crepes covered to prevent them from drying out. Makes 8 crepes.
