Ingredients/Components

  • milk - 2 c
  • salt - 1/2 tsp
  • flour
  • butter - 2 Tbsp
  • eggs, beaten - 1 doz
  • melted butter - 3 Tbsp
  • pepper - 1/8 tsp
  • soft bread crumbs
  • can sliced mushrooms, drained - 1 oz
  • chopped green onion - 1/4 c
  • cubed ham - 1 c
  • American cheese, shredded - 1 c

How to make scrambled egg casserole:

Topping:1/4 c. melted butter2 1/4 c. soft bread crumbs To make cheese sauce, melt butter, blend in flour and cook for one minute. Gradually stir in milk, cook until thick. Add salt, pepper and cheese, stir until cheese melts. Set aside. Saute ham and green onion in 3 tablespoons butter until onion is tender. Add eggs and cook over medium heat until eggs are set. Stir in mushrooms and cheese sauce. Spoon eggs into greased 9 x 13-inch pan. Combine topping ingredients and spread evenly over egg mixture. Cover. Chill overnight. Uncover and bake at 350° for 30 minutes. Yields 10 to 12 servings.
