Scottish shortbread cookies

Ingredients/Components
- granulated sugar - 1/4 c
- confectioners sugar - 1/4 c
- all-purpose flour
- butter 2 1/2 sticks, refrigerated and cut into 8 or 10 pieces
How to make scottish shortbread cookies:
Preheat oven to 275°. Place sugar in food processor and process until very fine. Add butter. Pulse until sugar disappears. Add flour, pulse until flour disappears. Mixture will be moist and crumbly. Place into a plastic bag. Press together to form dough.Knead until dough holds together. Remove and shape into 1-inch balls. Place on ungreased cookie sheet, 2-inches apart. Flatten each with a lightly moistened cookie press or fork. Bake 45 minutes at 275° until pale golden. Yields approximately 4 dozen.
