Ingredients/Components

  • margarine - 1/3 c
  • minced onion - 1/2 c
  • flour - 1/3 c
  • milk - 3 c
  • grated Cheddar cheese
  • salt - 1 Tbsp
  • dry mustard - 1/4 tsp
  • pepper black - 1/8 tsp
  • thinly sliced potatoes - 10 c
  • paprika - 1/4 tsp

How to make scalloped potatoes:

In medium saucepan, melt margarine. Add onion and saute until soft. Stir in flour. Cook over low heat for 1 minute. Gradually add milk, stirring constantly. Cook over medium heat until slightly thickened and begins to boil. Add 1 cup cheese, salt, mustard and pepper. Remove from heat; stir until cheese is melted.

Arrange half the potato slices in 13 x 9-inch greased baking dish. Pour half the sauce over the potato slices in pan. Pour on remaining sauce. Cover with foil and bake for 1 hour or until potatoes are fork-tender. Uncover and sprinkle with remaining 1 1/2 cups cheese and paprika. Bake until cheese melts (about 5 minutes).
