Ingredients/Components

  • milk
  • salt - 2 tsp
  • flour - 4 Tbsp
  • butter - 4 Tbsp
  • dry mustard - 1/2 tsp
  • paprika - 1/2 tsp
  • chopped onion - 1/2 c
  • chopped green pepper - 1/2 c
  • dash of pepper - 1 item
  • cracker crumbs - 2/3 c
  • eggs, slightly beaten - 2 item
  • cans corn - 4 item

How to make scalloped corn:

Cook the onion and green pepper in 4 tablespoons butter until tender. Remove from heat. Stir in flour and seasonings. Cook over low heat, stirring until mixture is bubbly. Remove from heat and gradually stir in milk. Heat to boiling, stirring constantly. Boil 1 minute. Stir in corn and eggs. Pour into ungreased 1-quart casserole dish. Combine cracker crumbs and 2 tablespoons melted butter. Sprinkle evenly over corn mixture. Bake at 350° for 30 to 35 minutes.
