Scalloped chicken



  • salt - 1 tsp
  • butter - 1 Tbsp
  • eggs, lightly beaten - 3 item
  • chopped onion - 1 Tbsp
  • chicken broth - 3 c
  • can sliced mushrooms, drained - 1 oz
  • diced celery - 3/4 c
  • cubed cooked chicken - 3 c
  • loaf white bread, cubed - 1/2 item
  • cracker crumbs, divided

How to make scalloped chicken:

In a mixing bowl, combine bread cubes and 1 cup cracker crumbs. Stir in broth, eggs, salt, celery, onion, chicken and mushrooms. Spoon into a greased 2-quart casserole. In a saucepan, melt butter; brown remaining cracker crumbs. Sprinkle over casserole. Bake at 350° for 1 hour.
