How to make scalloped carrots:

Boil carrots until tender; drain. Add Velveeta cheese to carrots; melt cheese. Put mixture in a greased dish. Melt butter; crush crackers and mix in with butter. Sprinkle on top of carrots and cheese. Bake at 325° for 20 minutes or until golden brown.
